Why not? I got up to make my SpinachJunkie breakfast and thought; while I’m here I’ll make lunch too. So that’s two ideas for me to share with you for your spinach challenge of twenty-one days to form a habit of eating spinach every day.
I started my day with a simple and traditional breakfast of eggs and chicken sausages, substituting bread with a side of steamed spinach. For lunch, or dinner, or to take with me on-the-go, I made a tuna and pasta salad to serve over a bed of fresh spinach.
Starting with fresh parsley, half of a shallot, a can of tuna with a sprinkle of oregano, garlic powder, balsamic, and a teaspoon each of mayo and dijon mustard. I mix that all up and add my pasta, some chopped fresh tomatoes, a drizzle of olive oil and some torn fresh spinach leaves, then toss again. I like to use a veggie pasta, because I am a label reader and the nutrition content always wins (I have found it also tends to sit a lot lighter in the belly leaving you satisfied but not full).
Now I have my day clear for everything else on my to do list, after #1 Eating Spinach, of course! Being back on the wagon of my spinach habit reminds me of how much better I feel when I eat better, and that in itself is positive reinforcement.
